In Thai, khao means “rice” and pad means “of or relating to being stir-fried”. Khao Pad in Thailand differs from Chinese fried rice is that it is prepared with Thai Jasmine rice instead of regular long-grain rice. It normally contains meat (chicken, shrimp, and crabare all common), egg,onions, garlic and sometimes tomatoes. The seasonings, which may include soy sauce, sugar, salt, possibly some chili sauce, and the ubiquitous nam pla (fish sauce), are stir-fried together with the other ingredients. The dish is then plated and served with accompaniments like cucumber slices, tomato slices, limeand sprigs of green onion and coriander.

  • 5 cups rice
  • 2 medium sized squids
  • 3 cucumber
  • 1 red onion
  • 1 tbs. garlic finely chopped
  • 1/2 tbs. sugar
  • 3 spring onions
  • 3 eggs
  • 10 medium sized black tiger prawn
  • 100g. chicken breast fillet
  • 2 large tomatoes
  • 3 tbs. vegetable oil
  • 3 tbs. white soy sauce
  • 2 lemons, halved
  • 1 coriander leaf

Directions

Add vegetable oil to a hot pan, quickly saute the garlic; add chicken, prawns, and squid until cooked. Flavour with white soy sauce, sugar, then add the rice. Push the rice to the side of the pan, add the rest of the oil, crack the eggs and mix with the rice. Add tomatoes and red onion, and combine. Garnish with coriander leaves. Serve with fish sauce and lemon.
